The taste of nature

Amid the flowering meadows and spectacular scenery of the Giau Pass, The Taste of Nature returns, the event that has for years united nature, knowledge, and high gastronomy in an immersive and unforgettable experience. Organized by Ristorante Da Aurelio, the famous courses dedicated to spontaneous mountain herbs invite enthusiasts, the curious, and lovers of good living to discover the alpine botanical heritage through lessons, guided walks, and moments of excellent conviviality.

The 2026 edition offers four exclusive events: two morning experiences with a suggestive lunch in the hut and two evening appointments with the traditional and unmissable dinner in the hut. Accompanying the participants will be two authoritative experts: Heinrich Abraham, among the foremost experts on alpine medicinal plants, and Michele Da Pozzo, a forest doctor and former director of the Dolomiti d’Ampezzo Natural Park. The activities will include insights into the properties of spontaneous herbs, demonstrations of essential oil extraction, recognition of edible species, and guided walks in the meadows of Giau.

Each appointment will conclude with a refined gastronomic journey crafted by chef Luigi Dariz and the guest chefs, accompanied by selections of dedicated wines and cocktails. A journey through flavors, aromas, and knowledge that tells the most authentic soul of the Dolomites.
