In the past, almost every family in Belluno had at least one cow. The milk it produced was used to prepare and preserve the wheels at home. Today cheese is produced in small dairies, alpine mountain huts, and in more structured settings; the processes are more modern, but the ancient quality is preserved.

The main ingredient, then as it is today, is always milk from animals that have eaten local hay and grass from pristine pastures on the mountainside. Taste cheese directly at alpine mountain huts or local dairies. You can plan itineraries to discover local flavours and farming culture. Or you can taste it in local dishes at restaurants and at mountain shelters. And remember to take some home to remember the smells and flavours of your vacation in Belluno!
