Red turnip, tradition and creativity for International Women's Day at Averau Refuge.
On the occasion of International Women's Day, from March 2 to 8, chef and sommelier Matteo Siorpaes will offer, in addition to the classic menu, one of the most well-known traditional dishes from the Ampezzan basin.

These are the “casunziei”—a kind of ravioli filled with red turnip, but in this case, there is a curious twist: the dish will be prepared with the same ingredients but in reverse order, giving the dish a unique flavor and a delicate pink color.

The filling is based on grana cheese, brown butter, and poppy seeds; the pasta is made with red turnips and cooked flour sauce and "cuderae," the white turnip that is usually mixed with the red turnip in the classic recipe.

Best enjoyed on the panoramic terrace with an incredible view of Civetta and Marmolada.
Only for the event, the "Red Velvet" will be available as a "pink" dessert.

And for the evening of March 8 to enhance the dinner, the sweet notes of harpist SONIA DAINESE will bring a vibrant and delicate touch to the evening. Throughout the night, the ladies will receive free mimosa flowers.
