With herbalist Heinrich Abraham, one of the leading experts on medicinal plants in South Tyrol, two courses focused on exploring wild mountain herbs to discover their properties, active ingredients, and main uses in cooking.

• Environment and Sustainability

With forestry doctor Michele Da Pozzo, director of the Natural Park of the Dolomites of Ampezzo, two courses dedicated to discovering the biodiversity of the area, understanding issues related to climate change, and the peculiarities of the flora.

Course Program for July:

Participants will be able to choose their preferred date from the 4 indicated.

In all cases, the program includes:

• 2:30 PM – meeting and presentation at the restaurant da Aurelio at Passo Giau
• 3:00 PM – lesson on the active ingredients of plants
• 4:00 PM – transfer to the Melei area (about 2 km from the restaurant) where, immersed in the greenery of nature, a guided walk begins along a path around Giau. Different itineraries will be proposed in the outings conducted by Heinrich Abraham and Michele Da Pozzo. The main edible wild herbs will be illustrated, with particular attention to their recognition, and their use in cooking will then be indicated. Furthermore, with the help of a distiller, the technique for extracting essential oils will be explained.
• Around 6:30 PM – aperitif at Aurelio's hut where, in collaboration with La Cave and Cortina Bevande, some wines will be presented for tasting, accompanied by themed snacks. To enrich the aperitif, the creations of the talented bartenders from the Il Faro restaurant in Cortina d’Ampezzo.

For those who wish, the evening will continue with dinner in the hut where Luigi Dariz and his staff will propose an author menu focused on wild herbs.

The Guest Chefs For the 2025 edition, dinner in the hut will be enlivened by the special participation of 4 guest chefs: Tuesday, July 1 we will have the pleasure of welcoming Federico Rovacchi (restaurant Baita Piè Tofana, Cortina d’Ampezzo, BL), Wednesday, July 2 Andrea Valentinetti (restaurant La Posa degli Agri, Isola dell’Abbà, PD), Monday, July 7 Alessandro Favrin (restaurant Seda, Farra di Soligo, TV) and Wednesday, July 9 Terry Giacomello.

All participants of the July Herb Courses will receive a useful themed gift: a body care product from the brand Lisapiù, which creates cosmetics inspired by nature in Cortina.

The participation fee is €75 for the course plus aperitif

€150 for the full experience (course, aperitif, and dinner in the hut at Passo Giau), to be paid on the day of the event.
